Lunch = Sandwich.
I turned my back on the humble sanga a few years ago and went in search of other lunch staples. This is the recipe that bought the sanga back as fiercely as Justin Timberlake did with sexy.

Down to business! Seriously, this is a fierce combo and a new take on the traditional waldorf. Pear, Fennel, Chicken, Blue vein cheese, Walnuts.
You’re thinking of Justin Timberlake eating THIS sandwich now aren’t you? The day just got better.
What You Need:
3 x Chicken tenderloins or 1 x small breast
1/2 Pear
7 x Walnuts
20g of Blue Vein Cheese
1/4 of a small fennel
Sourdough
Salad Leaves
Parsley
Dressing:
2 x teaspoons of whole egg mayo
1/4 teaspoon of Dijon Mustard
1 x lemon
Salt and Pepper
Make it Happen:
1/ Pan from the chicken with some olive oil spray until cooked
2/ Chop fennel, walnuts and pear into small bits
3/ Throw the fennel, walnuts, pear and parsley into a bowl, then crumble the blue cheese into the mixture.
4/ Chop chicken and add to the mixture and mix
5/ Time to make the dressing, add mayo, mustard, lemon juice. Mix well and season well with salt and pepper.
6/ Coat the mixture with the dressing well.
7/ Top 1 slice of the sourdough with lettuce leaves and then top with the mixture, top it with another slice and serve.

Yum! I always like the idea of a Waldorf salad but never thought about putting it in a sandwich for some reason – genius!
